Lakeview Health is proud of its new culinary team, led by Chef Marco Grave de Peralta. Enticing, healthy foods play a key role in nourishing our patients here and starting recovery right when they complete treatment. Here’s a sampling of several days of our regular menus, plus our vegetarian and vegan options.

Lunch

Chicken Cordon Bleu

Chicken cordon bleu, with ham and Swiss cheese with a mustard cream sauce, brown rice pilaf and sautéed mixed veggies.

Pot Roast

Pot roast with pan gravy, roasted rosemary red bliss potatoes and sautéed mixed veggies.

Pizzas

Homemade personal pizzas, your choice of cheese, meat lovers or veggie.

Dinner

BBQ Pork Sandwiches

Authentic BBQ pulled pork sandwiches. Slow roasted pulled pork, served with brown sugar baked beans and homemade coleslaw.

Baked Tilapia

Herbed-crusted baked tilapia, served with a baked potato and sautéed mixed veggies.

Roasted Turkey

Roasted turkey sun-dried tomato basil wraps, served with your choice of pasta salad, chips or fresh fruit.


Vegetarian Menu Options

Vegetarian Pizza

Made on a whole wheat pizza crust, an assortment of roasted veggies including mushroom, onion, peppers and roasted corn, topped with mozzarella.

Vegetarian Lasagna

Layered with spinach filled ricotta cheese, roasted veggies, pasta and marinara sauce, topped with mozzarella.

Veggie Burger

A thick veggie burger, with or without cheese served with lettuce, sliced tomato and red onions, deli pickle spear and a side of baked chips.

Roasted Veggie Wrap

An assortment of roasted veggies including zucchini, yellow squash, red onion, peppers, mushrooms, toasted pine nuts, rolled in a whole wheat wrap spread with a roasted garlic hummus. Served with potato chips.

Fish of the Day

Baked with Old Bay seasoning and lemon, served with a baked potato, sauté mixed veggies and a whole wheat dinner roll.

Garden Salad

A large tossed salad served with tons of fresh veggies, cottage cheese, nuts, dried cranberries and roasted garlic hummus.


Vegan Menu Options

Veggie Burger

A thick veggie burger, served with lettuce, sliced tomato and red onions, deli pickle spear and a side of French fries.

Roasted Veggie Wrap

An assortment of roasted veggies including zucchini, yellow squash, red onion, peppers, mushrooms, toasted pine nuts, rolled in a whole wheat wrap spread with a roasted garlic hummus. Served with potato chips.

Garden Salad

A large tossed salad served with tons of fresh veggies, nuts, dried cranberries and roasted garlic hummus.

Pasta Primavera

A large helping of spaghetti pasta topped with Italian blended veggies, served with a red sauce.

Stuffed Peppers

Two peppers, red and green, stuffed with roasted veggies and rice, topped with marinara sauce.

 Peanut Butter & Jelly

A premade peanut butter and jelly Uncrustable filled with grape jelly.
